  • 1 cup Bell peppers sliced

Preparation Steps
  1. Gather all your ingredients. Chop the chicken into bite-sized pieces and mince the garlic and ginger.
  2. In a large pot, heat oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute.
  3. Increase heat and add chopped chicken. Cook for about 5 minutes until chicken is no longer pink.
  4. Pour in chicken broth and coconut milk, stir to combine, and let it simmer.
  5. Add bell peppers and carrots to the pot and simmer for about 10 minutes.
  6. Remove from heat and stir in lime juice and soy sauce, adjusting seasoning as needed.
