Step-by-Step Instructions
  1. Preheat your oven to 200°C (425°F).
  2. Spread drained chickpeas on a baking tray lined with parchment paper. Drizzle with olive oil and sprinkle with spices. Roast for about 10 minutes until golden.
  3. Peel and cut carrots into uniform pieces. Toss with maple syrup, sriracha, olive oil, salt, and pepper until well-coated.
  4. After 10 minutes, season chickpeas with salt and any additional spices. Return to oven for another 20-25 minutes.
  5. Place prepared carrots on a separate baking tray and roast for about 30 minutes, turning halfway through.
  6. Mix yogurt with minced garlic, lemon juice, olive oil, and salt for the yogurt sauce.
  7. Assemble by spreading yogurt sauce on a platter, layering roasted carrots and chickpeas, and garnishing with herbs and pistachios.
