  • 1 sheet Puff Pastry Thawed before use
For the Filling
  • 1 cup Frozen Chopped Spinach Thawed and excess water squeezed out
  • 1 medium Yellow Onion Diced
  • 2 cloves Garlic Minced
  • 1 tbsp Olive Oil For sautéing
  • 1 cup Cottage Cheese
  • 0.5 cup Grated Parmesan
  • 0.25 tsp Nutmeg Optional
  • to taste Salt and Pepper For seasoning
  • 1 large Egg For egg wash

Method
 

Preparation Steps
  1. Thaw puff pastry and frozen spinach for about 30 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Dice onion and mince garlic. Sauté in olive oil until translucent.
  4. In a bowl, mix cottage cheese, Parmesan, nutmeg, salt, pepper, and cooled onion-garlic mixture with spinach.
  5. Roll out the puff pastry to about 10x10 inches and transfer to a pie dish.
  6. Fill the pastry with spinach filling, fold corners over the top.
  7. Brush with beaten egg for a golden finish.
  8. Bake for about 45 minutes until golden brown.
  9. Let cool for 5 minutes before slicing and serving.
