  1. Preheat your oven to 400°F (200°C). Wash and peel sweet potatoes, then cube them into uniform pieces, about 1-inch.
  2. In a bowl, toss the cubed sweet potatoes with avocado oil, garlic powder, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for 18 minutes, then stir and roast for an additional 5 to 8 minutes until golden brown and tender.
