- Season the pork chops with garlic powder, onion powder, paprika, salt, and pepper. Allow to sit for about 10 minutes.
- Halve the baby potatoes and prepare the onion and garlic.
- Heat vegetable oil in a skillet over medium-high heat. Sear pork chops for 4-5 minutes on each side.
- In the same skillet, reduce heat and add butter. Fry halved potatoes cut-side down for about 5 minutes.
- Add onions to the skillet and sauté for 3-4 minutes. Stir in minced garlic and cook for 30 seconds.
- Sprinkle flour over potato and onion mixture, and cook for 1 minute.
- Whisk in chicken broth gradually, then stir in heavy cream and thyme. Simmer to thicken.
- Return pork chops to skillet, spoon gravy over them, cover, and simmer for 25-30 minutes.
