Step-by-Step Instructions
- Start by combining 2 tablespoons of sugar, 2 tablespoons of Japanese soy sauce, 2 tablespoons of rice vinegar, and 1 tablespoon of mirin in a medium mixing bowl. Whisk the ingredients together vigorously for about 1 minute, or until the sugar has fully dissolved.
- Gradually add in 3 tablespoons of neutral oil and 1 tablespoon of sesame oil, followed by 1 teaspoon of finely grated fresh ginger. Whisk again until all elements are well incorporated.
- Select fresh Sydney Rock or Pacific oysters, and carefully shuck each one, ensuring you keep the liquid in the shells. Arrange the opened oysters on a serving platter lined with crushed ice or rock salt.
- Using a small spoon, drizzle approximately 3/4 teaspoon of the prepared dressing over each oyster, adjusting to 1 1/4 teaspoons for larger oysters. Make sure the dressing evenly coats the oysters.
- Top each oyster with a small dollop of salmon roe, if using, and sprinkle finely chopped chives for added freshness.
