Step-by-Step Instructions
  1. Start by combining 2 tablespoons of sugar, 2 tablespoons of Japanese soy sauce, 2 tablespoons of rice vinegar, and 1 tablespoon of mirin in a medium mixing bowl. Whisk the ingredients together vigorously for about 1 minute, or until the sugar has fully dissolved.
  2. Gradually add in 3 tablespoons of neutral oil and 1 tablespoon of sesame oil, followed by 1 teaspoon of finely grated fresh ginger. Whisk again until all elements are well incorporated.
  3. Select fresh Sydney Rock or Pacific oysters, and carefully shuck each one, ensuring you keep the liquid in the shells. Arrange the opened oysters on a serving platter lined with crushed ice or rock salt.
  4. Using a small spoon, drizzle approximately 3/4 teaspoon of the prepared dressing over each oyster, adjusting to 1 1/4 teaspoons for larger oysters. Make sure the dressing evenly coats the oysters.
