- In a food processor, combine the Medjool dates, roasted cashews, fine unsweetened shredded coconut, vanilla extract, and salt. Pulse until the mixture reaches a sticky consistency, about 1-2 minutes.
- Sprinkle in the cacao nibs and pulse briefly for about 10-15 seconds to incorporate without breaking them down completely.
- Take about a tablespoon of the mixture and roll it into a small ball. Continue until you’ve formed approximately 14 bites.
- Optional: Roll each energy bite in additional unsweetened shredded coconut for added texture. Place them on a parchment-lined baking sheet.
- Transfer the baking sheet to the refrigerator and let them chill for at least 30 minutes.
- Store in an airtight container in the fridge for up to one week or freeze for up to three months.
