  1. In a food processor, combine the Medjool dates, roasted cashews, fine unsweetened shredded coconut, vanilla extract, and salt. Pulse until the mixture reaches a sticky consistency, about 1-2 minutes.
  2. Sprinkle in the cacao nibs and pulse briefly for about 10-15 seconds to incorporate without breaking them down completely.
  3. Take about a tablespoon of the mixture and roll it into a small ball. Continue until you’ve formed approximately 14 bites.
  4. Optional: Roll each energy bite in additional unsweetened shredded coconut for added texture. Place them on a parchment-lined baking sheet.
  5. Transfer the baking sheet to the refrigerator and let them chill for at least 30 minutes.
  6. Store in an airtight container in the fridge for up to one week or freeze for up to three months.
