Ingredients
  

For the Chicken
  • 1 pound Chicken Thighs or breasts for a leaner option
  • 1/4 cup Tamari/Soy Sauce use coconut aminos for gluten-free
  • 3 cloves Garlic fresh preferred
  • 2 tablespoons Cold, Salted Butter or olive oil for dairy-free
For the Sauce
  • 2 pieces Chipotle Chilies in Adobo adjust to your spice preference
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Honey can substitute with maple syrup
  • 1 teaspoon Sweet Paprika
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Fresh Thyme or less dried thyme
For the Pineapple and Garnishing
  • 2 cups Pineapple Chunks fresh or canned
  • 2 tablespoons Sesame Seeds for topping
  • 1 piece Avocado sliced
For Serving
  • 2 cups Rice jasmine or basmati

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Gather ingredients and prepare your large sheet pan.
  2. Arrange chicken pieces on the prepared sheet pan, skin-side up for thighs.
  3. Blend tamari, apple cider vinegar, honey, tomato paste, chipotle chilies, paprika, thyme, garlic, and salt in a blender until smooth.
  4. Pour the sauce over the chicken, then scatter pineapple chunks around.
  5. Slice butter and place on top of chicken, then sprinkle sesame seeds.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Mix mayo, Thai chili sauce, garlic, and lime zest in a bowl for the Bang Bang sauce.
  8. Plate the chicken and pineapple over cooked rice, drizzle with Bang Bang sauce, and top with avocado.
