Step‑by‑Step Instructions for Spicy Sofritas Tofu
  1. Begin by draining the extra-firm tofu. Wrap in a kitchen towel and press under a heavy object for 15-20 minutes. Crumble into small pieces and set aside.
  2. In a blender, combine the roasted poblano peppers, tomatoes, garlic, chipotle powder, cumin, and salt. Blend until smooth.
  3. Heat canola oil in a large skillet over medium heat. Add crumbled tofu and sauté for 5-7 minutes until slightly browned.
  4. Pour the blended sauce over the sautéed tofu and stir to coat. Reduce heat, cover, and simmer for 30 minutes.
  5. Serve hot in tortillas, over rice, or as a filling for burrito bowls. Garnish with fresh cilantro.
