- Preheat your grill to medium heat, around 350°F (175°C).
- Remove leaves and trim the stem from the cauliflower. Cut into four 1-inch thick steaks.
- Lightly coat both sides of the cauliflower steaks with oil.
- Grill cauliflower steaks for 5-6 minutes until grill marks form, then flip and grill the other side.
- Check for tenderness by poking a fork into the steaks. Cook longer on indirect heat if necessary.
- Remove from grill, brush with mayonnaise, and sprinkle with chili powder, Cotija, and cilantro.
- Squeeze lime juice over each steak before serving.
