- In a medium bowl, whisk together one egg and melted butter until well combined. Then, add coconut flour, almond flour, heavy whipping cream, sweetener, baking powder, and vanilla extract. Mix vigorously for about 2 minutes until you achieve a smooth, lump-free batter.
- Grease a microwave-safe mug or ramekin generously with butter or coconut oil to prevent sticking.
- Pour the prepared batter into the greased mug, filling it about three-quarters of the way full. Microwave on high for 90 seconds.
- While the mug cake is in the microwave, melt 1 tablespoon of butter with an equal measure of sweetener in a non-stick pan over medium-high heat. Stir in chopped pecans and cook for 2-3 minutes until golden brown.
- Carefully remove the mug cake from the microwave, pour warm caramelized pecans on top, and enjoy.
