For the Skillet
  • 1 pound Italian Sausage spicy or sweet based on preference
  • 1 can Cannellini Beans drained and rinsed
  • 1 medium Onion diced, yellow or white preferred
  • 3 cloves Garlic minced
  • 4 cups Kale chopped, tough stems removed
  • 2 tablespoons Olive Oil extra virgin recommended
  • to taste Salt
  • to taste Black Pepper freshly cracked preferred
  • 1 tablespoon Lemon Juice fresh-squeezed preferred
Optional Enhancements
  • to taste Red Pepper Flakes for heat
  • to taste Parmesan for serving
  • 1 loaf Crusty Bread for dipping

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil over medium heat for about 1-2 minutes until shimmering.
  2. Add 1 pound of Italian sausage to the skillet, breaking it into crumbles. Cook for 5-7 minutes until browned.
  3. Stir in 1 diced onion and cook for 4-5 minutes until translucent.
  4. Mix in 3 minced garlic cloves and cook for an additional minute until fragrant.
  5. Add 4 cups of chopped kale with a pinch of salt. Cook for 3-5 minutes until vibrant and tender.
  6. Fold in 1 can of drained cannellini beans. Cook for an additional 2-3 minutes until heated through.
  7. Taste and adjust seasoning, adding salt, black pepper, and lemon juice before serving.
