Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and brush a 9-inch skillet with olive oil.
  2. Wash and slice the sweet potatoes into 3-4mm thick rounds using a mandoline.
  3. In a bowl, combine sliced sweet potatoes with melted butter, olive oil, minced garlic, salt, pepper, and rosemary. Mix well.
  4. Arrange sweet potato slices in the skillet in a circular overlapping pattern.
  5. Cover with foil and bake for 30 minutes, then remove foil and bake for another 20 minutes at 220°C (430°F).
  6. Let cool slightly and garnish with rosemary and sea salt before serving.
