  1. In a large mixing bowl, combine pumpkin puree, sugar, pumpkin spice, cinnamon, and vanilla extract. Blend until smooth, about 2 minutes.
  2. Add the mascarpone cheese into the pumpkin mixture and mix until just incorporated. In a separate bowl, whip the heavy cream until soft peaks form, about 3-4 minutes. Fold the whipped cream into the pumpkin mixture gently.
  3. Combine cold brew coffee or espresso with amaretto in a shallow dish. If using concentrated cold brew, dilute with water at a 1:1 ratio. Stir well.
  4. Quickly dip each lady finger into the coffee mixture, ensuring they absorb flavor without becoming soggy. Lay half of them in a pan.
  5. Spread half of the pumpkin mixture over the first layer of lady fingers, smoothing it out evenly.
  6. Repeat soaking for the remaining lady fingers and place them over the first pumpkin layer. Spread the rest of the pumpkin mixture on top.
  7. Dust the top with cinnamon using a fine mesh strainer. Cover and refrigerate for at least 4 hours, preferably overnight.
