For the Bread
  • 2 slices Sourdough Bread Substitute with hearty white or Italian bread for a twist.
For the Spread
  • 1 tablespoon Mayonnaise Alternative to butter for golden crunchy crust.
  • 2 teaspoons Unsalted Butter Add more if desired; can use plant-based butter.
For the Cheese
  • 1 cup Aged Cheddar Cheese Can use sharp or mild cheddar, or gouda.
  • 1 cup Gruyère Cheese Swiss cheese can be a substitute.

Method
 

Cooking Instructions
  1. Heat a skillet over medium heat for about 2 minutes.
  2. Spread a thin layer of mayonnaise on one side of each sourdough slice.
  3. Melt 1 teaspoon of unsalted butter in the skillet, then place one slice of bread in, mayo-side down, cooking for 2-3 minutes.
  4. Add Aged Cheddar and Gruyère cheese on top, then cover with the second slice of bread, mayo-side up.
  5. Flip the sandwich after 3-4 minutes, adding another teaspoon of butter and cooking until golden brown.
  6. Press down with a spatula and cook for another 3-4 minutes until the cheese is bubbling.
  7. Remove from skillet, let rest for 2 minutes, then slice and serve.
