Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).

  3. Beat in the egg, egg yolks, and pure vanilla extract until smooth and creamy.
  4. Gradually add all-purpose flour to the mixture until a soft dough forms.
  5. Set aside ¾ cup of dough, add peppermint oil and food color, and mix until uniform.
  6. Scoop 1 tablespoon of plain dough, wrap it around 1 teaspoon of mint dough, and seal.
  7. Roll the cookies in green nonpareil sprinkles and place on a lined baking sheet.
