Ingredients
  

For the Meatloaf
  • 2 lbs Ground Chicken Ground turkey can be used as a substitute.
  • ½ cup Olive Oil Avocado oil can be substituted.
  • 1 Onion Finely chopped; shallots can be an alternative.
  • 3 cloves Garlic Pressed or minced; fresh is preferred.
  • ¼ cup Fresh Parsley Chopped; dried parsley can be used in a pinch.
  • 1 Egg Large; consider a flaxseed egg for a vegan alternative.
  • ¾ teaspoon Pepper Adjust according to preference; white pepper can be used.
  • ¾ teaspoon Salt Low-sodium salt can be used to keep it healthier.
  • 6-8 slices Deli Ham Turkey ham or vegetarian ham can substitute.
  • 6-8 slices Swiss Cheese Gruyère cheese can be used as an alternative.
For the Glaze
  • 2 tablespoons Butter Melted; olive oil or ghee can be used.
  • 1 tablespoon Apple Cider Vinegar Regular vinegar works as well.
  • 1 tablespoon Dijon Mustard Whole grain mustard can be used for a twist.
  • 2 teaspoons Sugar Substitute Erythritol or monk fruit sweetener are great options.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a meatloaf pan with olive oil or cooking spray.
  2. In a skillet over medium heat, add olive oil and sauté the finely chopped onion until translucent, about 5 minutes, then add minced garlic and cook for another minute.
  3. In a large mixing bowl, combine ground chicken, parsley, egg, pepper, and salt, then mix in the cooled onion and garlic mixture.
  4. Spread the meat mixture into a ¾ inch thick rectangle on parchment paper.
  5. Layer the deli ham and then the Swiss cheese evenly over the meat mixture.
  6. Roll the meat mixture tightly into a log using the parchment paper and place it seam-side down in the prepared pan.
  7. In a small bowl, whisk the melted butter, vinegar, mustard, and sugar substitute together and brush it generously over the meatloaf.
  8. Bake in the preheated oven for 1 hour and 20 minutes until the internal temperature reaches 165°F (74°C).
  9. Let the meatloaf rest for about 10 minutes before slicing.
