Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix halved cherries, blueberries, honey, cornstarch, vanilla extract, and bourbon until well combined. Let sit for about 10 minutes.
  3. Roll out the thawed puff pastry to 1/4 inch thick and transfer to the lined baking sheet.
  4. Spoon the fruit filling into the center, leaving a 1-inch border. Fold the edges of the pastry over the filling.
  5. Brush the edges with the beaten egg and sprinkle coarse sugar over the borders.
