Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a 9x13 inch baking dish with cooking spray.
  2. Heat 1 teaspoon of avocado oil in a skillet over medium-high heat. Add diced onion and sauté for about 2 minutes.
  3. Add the ground beef to the skillet and cook for 8-10 minutes, breaking it apart until evenly browned.
  4. Transfer the beef and onion mixture to the baking dish, creating an even layer.
  5. In the skillet, add another 2 teaspoons of avocado oil and mushrooms, cooking for 2-4 minutes until softened.
  6. Sprinkle flour over the mushrooms and stir for about a minute. Gradually whisk in the broth and simmer for 3-5 minutes.
  7. Season the sauce with salt, garlic powder, onion powder, and pepper, then pour over the beef mixture.
  8. Fold in lentils, mixed vegetables, cauliflower rice, and half of the cheddar cheese, mixing until distributed.
  9. Spread the mixture in the baking dish and layer frozen tater tots on top, pressing gently, then sprinkle with remaining cheese.
  10. Bake for 35-40 minutes until bubbly and golden brown.
