Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by lining it with parchment paper and lightly greasing it.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Add 2 large eggs and 1 teaspoon of vanilla extract, mixing until smooth.
- Incorporate 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ¼ teaspoon of salt to the wet mixture, stirring until just combined.
- Spread about two-thirds of the batter into the prepared baking pan.
- Toss 2 cups of chopped fresh strawberries with 1 tablespoon of cornstarch and 1 optional tablespoon of sugar, then spoon over the shortcake base.
- Drop spoonfuls of the remaining batter over the strawberries, ensuring some areas remain exposed.
- Bake for 30-35 minutes, until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan on a wire rack before slicing into squares.
