For the Meatloaf
  • 1 pound Ground Turkey Use at least 90% lean for best flavor and texture.
  • 1 cup Mushrooms Finely chopped.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Oil For sautéing; olive oil preferred.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 2 tablespoons Worcestershire Sauce Soy sauce can be a substitute.
  • 1/2 cup Ketchup Reserved for glazing.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be substituted.
  • 1/2 cup Milk Any milk or plant-based alternative.
  • 2 large Eggs Lightly beaten.
For the Glaze
  • 1/2 cup Ketchup For topping.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a baking pan with foil, lightly greasing it with oil.
  2. In a medium skillet, heat oil over medium-low heat and sauté the finely chopped onion for about 5 minutes until soft and golden.
  3. Stir in minced garlic, chopped mushrooms, salt, and pepper. Cook for an additional 10 minutes until mushrooms are tender.
  4. Transfer the vegetable mixture to a large bowl, stir in Worcestershire sauce and 3 tablespoons of ketchup, and let it cool for 5 minutes.
  5. Soak panko breadcrumbs in milk in a separate bowl, then combine them with the eggs after a few minutes.
  6. Gently fold in ground turkey into the cooled vegetable mixture, season with remaining salt and pepper, and form a 9x5-inch loaf.
  7. Top with remaining ketchup, spreading evenly, then bake for 50 minutes until the internal temperature reaches 170°F (77°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving warm.
