- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a food processor, combine the salted mini pretzel twists, grated parmesan cheese, smoked paprika, onion powder, and garlic powder. Pulse until fine.
- In a separate bowl, beat the eggs and whisk in balsamic vinegar. Toss the chicken tenderloins in this mixture until coated.
- Dredge the chicken in the prepared pretzel mixture and place on the baking sheet. Drizzle with olive oil.
- Bake for 20-25 minutes until golden brown and cooked through.
- While baking, combine honey, balsamic vinegar, dried thyme, cayenne pepper, onion powder, and garlic powder in a pot over low heat.
- Serve the chicken with the honey balsamic sauce drizzled over top and garnished with fresh thyme.
