Step-by-Step Instructions
  1. Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
  2. Wash and peel russet potatoes, then slice into thin matchsticks and toss in a bowl with flour, paprika, garlic powder, cayenne pepper, and salt.
  3. Drizzle extra virgin olive oil over the seasoned potatoes and toss until well coated.
  4. Spread seasoned potato sticks in a single layer on baking sheets, pressing gently with a spatula.
  5. Bake for 10-15 minutes, flip fries, and bake another 10 minutes or until golden brown.
  6. Once cooked, sprinkle grated Parmesan cheese and toss with chopped parsley or oregano.
  7. In a mixing bowl, whisk mayo, lemon juice, Dijon mustard, Worcestershire sauce, garlic, and additional Parmesan for Caesar dressing.
  8. Serve fries draped with Caesar dressing and enjoy!
