Cooking Steps
  1. Heat a small fry pan or skillet over medium heat for about 2 minutes. Spray the surface with cooking oil to prevent sticking.
  2. Crumble the feta cheese into the pan, spreading it evenly. Let it sauté for 2-3 minutes until golden-brown.
  3. Carefully crack an egg in the center of the melted feta. Cook uncovered for about 4 minutes until egg white is set but yolk remains runny.
  4. Sprinkle dried oregano and red pepper flakes over the cooking egg to infuse flavor.
  5. Warm a tortilla or slice of toast in another pan. Smash the avocado onto the base and add a squeeze of lemon juice.
  6. Carefully lift the egg and feta with a spatula and place it atop the prepared tortilla or toast.
  7. Garnish with pickled onions and a drizzle of chili oil. Serve immediately while warm.
