  • 8 ounces elbow macaroni or rotini
  • 6 slices crispy bacon or turkey bacon for a lighter option
  • 1 cup frozen peas thawed
  • 1 cup freshly grated parmesan cheese or nutritional yeast for a dairy-free version
For the Creamy Dressing
  • 1 cup mayonnaise or Greek yogurt for extra tang
  • 1 tablespoon vinegar
  • to taste salt
  • to taste pepper

Method
 

Cooking Steps
  1. Boil a large pot of salted water. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  2. In a skillet over medium heat, cook bacon until crispy, about 7-10 minutes. Transfer to a paper towel-lined plate and chop into pieces.
  3. In a large bowl, combine cooled pasta, bacon, peas, and parmesan. Gently fold ingredients together.
  4. In a small bowl, whisk together mayonnaise, vinegar, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad mixture and toss gently to coat all ingredients.
  6. Taste and adjust seasoning with additional salt and pepper.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
