  • 10 pieces Whole Cloves Plus 6-7 for spiced syrup
For the Spiced Syrup
  • 1/2 cup Sugar Consider honey for a twist
  • 1 cup Water For syrup
  • 2 pieces Cinnamon Sticks Alternative: ground cinnamon
  • 2 pieces Star Anise Omit if preferred simpler
  • 6 pieces Allspice Berries Optional; substitute ground allspice
  • 1 inch Fresh Ginger Peeled and sliced
For the Wines
  • 750 ml Red Wine Good-quality for best taste
  • 750 ml Port Wine Sherry may be substituted
For Garnishing
  • 8 pieces Extra Garnishes Cinnamon sticks and dried orange wheels

Method
 

Step-by-Step Instructions for Smoking Bishop
  1. Preheat your oven to 400°F.
  2. Push whole cloves into the skin of the two oranges, reserving 6-7 for the spiced syrup.
  3. Roast the prepared oranges in a baking dish for 45-50 minutes.
  4. Combine 1 cup of water and 1/2 cup of sugar in a saucepan with the spices, bringing it to a boil and then simmering.
  5. In a large pot, combine 750 ml red wine and 3/4 of your spiced syrup, gently heating.
  6. Squeeze the juice from the roasted oranges into the pot, adding the halves and 750 ml of Port wine.
  7. Heat the mixture gently once more, adjusting sweetness with remaining syrup if desired.
  8. Strain the mixture if desired, then ladle it into mugs and garnish.
