  • 1 cup Shredded Cheddar Cheese Try different varieties like mozzarella or gouda for a twist.
For the Liquid
  • 1 cup Buttermilk If not on hand, make a DIY version by adding 2 tsp of lemon juice or vinegar to 1 ¾ cups milk and letting it curdle.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare your baking sheet by lightly flouring it.
  2. In a large mixing bowl, combine all-purpose flour, baking soda, and salt and mix thoroughly.
  3. Gently fold in chopped fresh chives, thyme, rosemary, sage, and shredded cheddar cheese.
  4. Pour in the buttermilk and stir until a shaggy dough forms.
  5. Turn the dough onto a floured surface and knead gently for 3 to 4 times.
  6. Shape the dough into a 7-inch circle.
  7. Transfer the loaf onto the prepared baking sheet and score a cross about ½ inch deep on top.
  8. Bake for 15 minutes at 425°F, then reduce the temperature to 375°F and continue baking for 30 to 35 minutes.
  9. Once baked, remove the bread and wrap it in a tea towel for at least 10 minutes.
  10. Slice and serve the warm Cheddar and Herb Soda Bread.
