Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (375°F).
  2. In a large roasting pan, add the washed and sliced mushrooms. Drizzle with olive oil, sprinkle with salt, black pepper, thyme, and minced garlic. Toss until well coated.
  3. Roast the mushrooms for 35 minutes, tossing halfway through, until golden brown and tender.
  4. Transfer the roasted mushrooms to a mixing bowl while hot, pour in the balsamic vinegar and more olive oil, then toss to coat.
  5. Allow the mushrooms to marinate uncovered at room temperature for about 2 hours, or refrigerate overnight for deeper flavor.
